From my personal experience making this cake annually for three years now, I learned a few things and offer them to you.
When making the cream filling, stir stir stir with a spoon or spatula. Avoid the short cut to use an electric mixer. It will separate the cream.
Remember the cream of tarter which is added when whipping the egg whites. I thought I had added it as I stated in the 2021 video. Turns out I added a bit of flour instead. The whites still whipped nicely, yet the cream of tarter would have made them ideal.
If you like cinnamon, add 1 - 2 teaspoons when sifting the dry ingredients together: cocoa, flour and salt.
Store the finished cake under refrigeration. Dust with powered sugar immediately before serving.
